This recipe turns a basic muesli into an easy slice. Yes it's sweet but you only have a small square which I guarantee you'll find hits the spot. Plus you get a nice mix of seeds, nuts and oats which can be hard work! If you like something sweet between meals, this is a lot healthier than sweet biscuits or chocolate.
Each piece of muesli slice contains 992 kilojoules ( 236 calories), 11g fat (including 7g saturated fat), 31g carbohydrate (including 20g sugars), 3g fibre and 79g sodium. Read our nutrition rating system.
1. Preheat oven to 180°C. Grease and line a 3cm deep 16cm x 26cm (base) lamington pan. Combine muesli, flour, dried fruit and sugar in a bowl.
2. Place butter and honey into a small saucepan over low heat. Stir constantly until butter is melted. Cool for 5 minutes. Add butter mixture and eggs to muesli mixture. Stir until well combined.
3. Spread mixture into prepared lamington pan, pressing down to pack it in. Bake for 25 to 30 minutes, or until a knife inserted into the centre comes out clean. Check so it doesn't burn around the edges. Allow to cool 10 minutes in pan.
4. Cut into 16 squares and store in a container in the refrigerator. Keeps well for 1 week.
