Apple Spice Muggin

This quick and easy dessert is ready in minutes. And there are NO leftovers to tempt you later!

Ingredients

  • ½ cup self-raising flour
  • ¼ cup quick-cook oats
  • 1 tablespoon raw sugar
  • ½ Pink Lady apple, skin on, grated
  • 1 teaspoon cinnamon
  • ½ teaspoon mixed spice
  • 2 tablespoons chopped walnuts
  • ¼ cup natural yoghurt
  • 1 egg
  • 1 tablespoon butter, melted
  • ½ tsp vanilla paste
  • Natural yoghurt or cinnamon (to serve)

Directions

  1. Place the dry ingredients in a bowl with the grated apple and stir to combine.
  2. In a separate bowl, combine the wet ingredients by lightly whisking together.
  3. Pour the wet ingredients into the bowl with the apple mixture. Stir until the mixture comes together to form a batter.
  4. Divide the batter evenly between two mugs. Wipe the inside rim of each mug clean from any excess batter to ensure the muggins rise evenly.
  5. Place one mug at a time into the microwave on the outside edge of the microwave plate. Cook for 90 seconds. Remove and set aside while you cook the remaining muggin.
  6. Serve muggins warm with extra natural yoghurt or a dusting of cinnamon.
